This thick fried tofu with simmered eggs is warm, hearty, and full of flavor. Thick slices of atsuage (fried tofu) are simmered with onion and nira (garlic chives) in a sweet and savory broth made with dashi, soy sauce, sugar, and mirin. Finished with gently cooked eggs, it’s a satisfying dish that’s perfect with a bowl of steamed rice.


💚INGREDIENTS     3 Serving

2    thick fried tofu (atsuage)

1/2       onion

1/2 bunch    garlic chives

2   egg

A)  1 cup    fish soup (hondashi)

      1 Tbsp     soy sauce

       1 Tbsp     mirin

       1   tsp   sugar


💛DIRECTIONS

1 Soak the thick fried tofu in hot water to remove the excess oil, Drain. Cut the thick fried tofu into easy-to-eat pieces.

Slice the onion thinly,Cut the garlic chives into 5 cm wide.

Break and beat the eggs in a mixing bowl

2. Add A in a pot. Boil and add the thick fried tofu and the onion. Simmer until the onion is soft. Add the garlic chives amd simmer quickly.

3. Drizzle eggs. Simmer until the eggs become half-cooked.

4. Arrange the dishes in a serving bowl.
