Discover a healthy twist on Japan’s beloved okonomiyaki! This enoki mushroom okonomiyaki combines finely chopped enoki, shredded cabbage, natto, and tender pork slices for a light yet satisfying savory pancake. Rich in fiber and protein, it’s a perfect everyday Japanese recipe that’s both nutritious and delicious.


💚INGREDIENTS  3 Serving

moderate amount  cabbage

1 pack  enoki mushroom

1    egg

1 pack natto

100g  pork slice

3 Tbsp  wheat flour

1/2  Tbsp  hondashi

moderate amount   okonomiyaki sauce

moderate amount   mayonnaise


💛DIRECTIONS 

1.Cut the cabbage into julienne strips.Chop the enoki mushroom finely.

2.Add 1 in a mixing bowl.Add the egg and the natto and the wheat flour and hondashi in the mixing bowl. Mix well.

3.Place the 2's dough in a frying pan.Place the pork slice on the dough.Cook on both sides until cooked through.

4.Arrange the okonomiyaki in a serving plate.Put the okonomiyaki sauce and mayonnaise on it.


💜Cooking Tips :

If you don’t have enoki mushrooms, you can finely chop other types of mushrooms and mix them into the batter as a substitute. When I tried this recipe, the pancake didn’t hold together very firmly, so it’s best enjoyed as a light, veggie-filled dish rather than a firm okonomiyaki. I used about 3 tablespoons of flour, but adding a bit more may help the mixture stick together better. If you can’t find okonomiyaki sauce, ketchup works surprisingly well as an alternative!
