A Comforting Bowl of Goodness: Chicken Tenderloin, Shiitake & Soy Milk Soup

Today, I made a simple but deeply satisfying soup that I just had to share with you. It’s made with just a few wholesome ingredients: chicken tenderloin (sasami), shiitake mushrooms, and soy milk, all gently simmered in a light chicken stock. The result? A delicate, soothing bowl of warmth that’s as kind to your body as it is to your taste buds.

What I love most about this soup is how light yet nourishing it is. The chicken tenderloin adds lean protein, the shiitake mushrooms bring umami and depth, and the soy milk gives it a creamy texture without being heavy. A dash of chicken stock ties everything together with subtle savory notes.

No complicated steps, no fancy tricks — just good ingredients, cooked with care.

It’s the kind of soup that makes you feel peaceful and balanced, perfect for a cozy evening or when you need something gentle on the stomach. And best of all, every ingredient is packed with health benefits, making it a wonderful choice for mindful eating.

If you're looking for a new comfort food that won’t weigh you down, give this combination a try. I think you’ll love how it makes you feel — inside and out.
